Movies, Many of the games (both battlefronts, both KOTOR (Though KOTOR2 i don't remember much of), Force commander, Rebellion, EMpires at War, Dark Forces, the CCG by decipher. Xwing, Tie Fighter, Rogue Squadron, Star Wars Arcade. Also the West End Games d6 game as well as WOTC d20 systems.
For books, I have only read the Glove of Darth Vader line. I will admit my knowledge of the extended universe is not extensive. I know bits and pieces.

Small History:
Raised during a time of strife and famine, he was born to an already harsh world. However, due to the lack of food at the time, his body developped a very slow metabolism. Growing up, he was found by the jedi order, at age 4. However, dispite the change of atmosphere, his body did not change.
In time, he became an obese padawan, though his size did not seem to make him any less agile then his peers. In some ways, this helped, as his large size was a deterent from others making trouble, and during negotiations, he held an intimidating demenor.
